Not sure when (or whether) it was ever "here" or "now," but: A) it's definitely (meaning possibly) up-and-coming; B) we needed another post in this category.
What the heck is quinoa?
Quinoa (pronounced KEEN-wah) is a grain. It's like rice, only smaller. It's like couscous, only bigger.
Why is quinoa "back"?
Aside from having flown under the radar for 3,000 years? We think it's because Mrs. Driver has started seeing quinoa recipes online and in magazines. And as readers of this blog will soon discover, Mrs. Driver is way cooler and way more in touch with what the kids are into these days than The Driver himself.
Around the Driver household, we cook it like rice -- using a combination of water and chicken broth to steam it until it's fluffy.
If you're into avoiding your refined (white) rice, pastas and other foods, quinoa is a nice change of pace from brown rice or whole wheat pasta.
Just wanted to get it out there into the blogosphere first. Of course, for 72Pinto, that means at least two years after something has become mainstream. In fact, as you read this post, you're probably on your third helping of quinoa.
